So I'm all setup with my largemouth bass fly gear. I'm using a redington predator 7'11" 8wt rod with a redington behemoth reel. I'm using rio's smallmouth bass fly line WF8F with rios smallmouth bass leaders and tippet.
So I got my floating line for poppers and deer hair divers, but I'm in need of a sinking fly line and I'm unsure which one I need. I'm mostly fishing warm lakes around the east texas area. Some of them are power plant lakes which can get pretty warm during the summer months. But most of the lakes I fish are not power plant lakes, and they're thick with lots of grass, stumps and sticks in the water. I need a sinking fly line of sorts to get those baitfish patterns down to around 5-10 feet deep. Any help on picking out an appropriate fly line? I see Rio has the type of fly line I'm needing, but all the ones they carry that I need for this come with a cold water coating to reduce memory in the line. Will these lines suffice in warm waters? Or should I avoid the fly lines with that cold water coating?

It should be fine. I'd go with the Rio versa-tip set up. Just get the 15 ft sinking section and add it to your WF floating line.
